Now featured in every single trendy restaurant in New York City, Avocado Toast is the simplest meal to make, and yet the most overpriced meal to eat if out at a restaurant.
I make this for breakfast, lunch, or dinner,
- 1 avocado, mashed
- 2 slices of toasted bread
- 2 tablespoons of sunflower seeds
- 1 cup of roasted cherry tomatoes
- olive oil, salt, and lemon juice
It’s really very simple! Mash up the avocado as you would for guacamole, spread it on the toasted pieces of bread. Top with roasted tomatoes (cooked in an oven on a baking sheet for 15 minutes with olive oil), and finish off with the rest of your garnishes! Really you can top it with whatever you’d like. It’s so healthy and SO filling! Add a side of baked sweet potato fries if you’re extra hungry!
